A friend made mole for a pot luck one time and I really liked the unusual flavor so I decided to attempt to make it myself and it turned out really well! We ate ate it spooned into corn tortillas, but I imagine it would be even better over rice since it's kind of runny and hard to hold in the tortillas. Ingredients:
1 large onion |
3 chicken breasts (cooked or uncooked) |
3 baking chocolate squares |
1 (7 ounce) can green chilies |
2 jalapenos |
14 ounces stewed tomatoes |
2 tablespoons cumin |
2 tablespoons cinnamon |
1 tablespoon nutmeg |
salt |
Directions:
1. Place chicken breasts and chocolate in crock pot. Half onion and chop halves into large slices; add to crock pot. In blender or food processor, blend remaining ingredients and pour into crock pot. Heat on high for 4 hours, stirring once or twice. |
