Slow Cooker Cheeseburger Soup |

All the tastes of a loaded grilled summer burger in a rich soup for winter! Adding the potato wedges, Caldereta style, completes the fun menu idea. :-) Ingredients:
3lbs ground beef, turkey, venison, etc |
about 6 cups beef broth or stock |
1 onion, diced |
1-3 jalapeno peppers, diced(to taste) |
28oz diced tomatoes(if using canned, don't drain) |
1 1/2t worcestershire sauce |
1t dry mustard |
1t dried dill weed |
several drops liquid smoke |
1/4-1/2 cup heinz chili sauce(sub ketchup if you like it, but we don't ... chili sauce is kinda like a spicier version |
1 1/4lb favorite hard cheese(cheddar, colby, jack, etc...i used jack in the soup then i used another 1/4lb of colby added at serving) |
1 cup half and half |
fresh ground pepper and kosher or sea salt, if needed |
about 1/2lb frozen potato wedges, cooked to package directions |
for garnish, or optional ingredients: crisp bacon, french fried onions and spinach... i used dried spinach flakes in the soup because i had them, but i don't expect everyone to have them available. fresh spinach can be added with the half and half, if desired |
Directions:
1. Combine beef, stock, onion, peppers, tomatoes, Worcestershire sauce, mustard, dill, liquid smoke, and chili sauce in slow cooker. 2. Let cook on low about 4-5 hours, until beef is cooked and soup is well heated. 3. Add half and half and the first pound of cheese and stir well. Continue to heat on low or warm(if your low temp boils soups, at this point, then it's okay to continue to heat it on warm) 4. Place a few potato wedges in the bowl, add soup, then garnish with the bacon and fried onions, if using, and the extra cheese. |
