Slow Cooker Black Bean Soup (Crock Pot) |

An old standby. Ingredients:
1 lb dried black beans |
1/2 lb diced ham |
5 cups chicken broth |
1/2 teaspoon garlic powder |
1/2 tablespoon chili powder |
1 teaspoon ground cumin |
3/4 teaspoon black pepper |
1 teaspoon cornstarch |
Directions:
1. Soak beans overnight. 2. Drain and rinse. 3. Place in a pan, cover with water, and simmer on low for an hour. 4. Drain beans. 5. Place all ingredients except cornstarch in the crock pot. 6. Cook on high for 4 hours. 7. Use a slotted spoon to remove about 1 cup of cooked beans and ham. 8. Place them in a blender with a little bit of the broth and puree. 9. Return to crock pot. 10. Combine cornstarch with cold water in a bowl and mix. 11. Add to crock pot and mix. 12. Cook for an another 30 minutes or until broth thickens. |
