This is great to have ready when you come home from a long day. The beef is tender and mouth-watering. Ingredients:
1 lb beef stew meat |
2 medium potatoes, peeled and cubed |
1 (14 1/2 ounce) can beef broth |
1 (11 1/2 ounce) can v8 juice |
2 celery ribs, chopped |
2 medium carrots, chopped |
1 medium sweet onion, chopped |
3 bay leaves |
1/2 teaspoon salt |
1/2 teaspoon dried thyme |
1/2 teaspoon chili powder |
1/4 teaspoon pepper |
2 tablespoons cornstarch |
1 tablespoon cold water |
1/2 cup frozen corn |
1/2 cup frozen peas |
Directions:
1. In 3-quart slow cooker, combine the first 12 ingredients. 2. Cover and cook on low for 7-8 hours or until meat is tender. 3. Discard bay leaves. 4. In small bowl, combine the cornstarch and water until smooth; stir into stew. 5. Add corn and peas. 6. Cover and cook on high for 30 minutes or until thickened. |
