Slow Cooker Beef and Ale Hotpot |

Slow cooker recipe adapted from Slow cooker by Sara Lewis, p41. Preparation time: 30 min Cooking time: 5-6 hours on High Ingredients:
2 tsp sunflower oil |
775 g stewing steak |
1 large onion, chopped |
3 tbsp plain flour |
500 g ale |
4 tsp dijon mustard |
12 g brown sugar |
2 tbsp tomato puree |
800 g potato, thinly sliced |
1/2 tsp salt |
1/4 tsp ground pepper |
10 g parsley |
Directions:
1. Preheat the slow cooker if necessary - see manufacturer's instructions. Heat the oil in a large frying pan (it needs to hold all the beef and ale). Add the beef and fry over a high heat, stirring until browned. 2. Add the onion to the beef and continue to fry unti the onion is browned but not bitter. Stir in the flour then quickly, before it sticks, add the beer, mustard, sugar, tomato puree and plently of salt and pepper. Bring to the boil, stirring, then transfer into the slow cooker pot. Stir. 3. Arrange the potato slices evenly over the top of the stew mix, then sprinkle with a little more salt and pepper. Place the lid securely on the pot, then cook on High for 5-6 hours. |
