Basic baked beans. Omit the bacon (or use soy substitute) for vegetarian beans. This recipe does need time to cook (plus additional time to soak the beans,) but there's hardly any effort and it's well worth the time! Ingredients:
1 pound dried navy beans |
1 large onion |
15 ounces del monte diced tomatoes, undrained |
1/3 cup molasses |
1/4 cup dark brown sugar |
1 tbsp cider vinegar |
2 tbsp canola oil |
1/4 pound bacon, diced |
1 tbsp dried mustard |
1 dash of red pepper |
1 cup boiling water |
Directions:
1. Soak navy beans overnight. Drain and rinse. Cook in large saucepan with fresh water just until they are tender. Drain and transfer to crock pot. 2. Mix in remaining ingredients. Cook 8-10 hours on low or until beans are soft. Add more water during cooking if beans start to dry out. |
