Use a small slow cooker for this oatmeal;a large one won't produce the same consistency.Very tasty. Ingredients:
8 c water |
2 c steel-cut oats |
2 c chopped dried apricots |
1 tsp ground cinnamon |
1/4 tsp salt |
1/4 tsp packed lt. brown sugar |
1/2 c sliced almonds,toasted as desired |
Directions:
1. Combine water,oats,apricots,cinnamon and salt in 3-4 qt. slow cooker. Cook,covered on low 6 hours. Stir in brown sugar;let stand 5 mins. Serve topped with almonds 2. Note: (Oatmeal can be made 1 week ahead. Cover and refrigerate.Reheat in microwave until warm) |
