Slow Cooker Apple Dijon Pork And Mushrooms |

An easy pork slow cooker dish that makes a nice autumn meal with a hint of apple. This will yield enough liquid to thicken outside of the slow cooker,to make a gravy, if desired. Ingredients:
3lb pork loin/roast |
8oz apple cider or juice |
12oz fresh mushrooms, sliced |
1 large onion, chopped |
3 cloves garlic, minced |
6 carrots, diced or 1/2lb baby carrots, halved |
1/4 cup dijon |
juice from 1/2 lemon or 1 lime |
2 springs fresh rosemary |
4 sprigs fresh thyme |
salt and pepper |
Directions:
1. Add all ingredients, except fresh herbs, to slow cooker, pouring juice over rest of the ingredients. 2. Cook on low 4-6 hours(add fresh herbs about halfway through cooking), until pork is tender and 160. Check taste and add salt and pepper, if needed. |
