Slow Cooked Stuffed Peppers |

An easy to put together slow-cooker recipe. Cook rice than needed once and you'll be able to skip that time-consuming step next time. Just refrigerate the remaining rice. Ingredients:
6 medium red bell peppers |
1 1/2 lbs ground beef |
1 cup rice, cooked |
1 tsp salt |
1 tsp garlic powder |
1/2 cup raisins |
28 oz tomato sauce |
Directions:
1. Remove tops of peppers about 1/2-inch from top, cutting crosswise. Seed and wash peppers, they should resemble a cup. Make crosswise cut on bottoms of peppers, just enough so that they will stand. Dice reserved tops (if desired); set aside. 2. Combine meat, rice mix, seasonings, raisins and reserved diced pepper (if desired); blend well. Fill peppers evenly with mixture; place in slow cooker, standing upright. 3. Pour tomato sauce over stuffed peppers. Cover; cook 4 hours on HIGH or 8 hours on LOW. |
