Slow-Cooked Barbecued Beef

Ingredients:
2 lbs beef chuck roast, fat trimmed
1 cup yellow onion, diced
1 teaspoon minced garlic
2 cups ketchup
1/4 cup balsamic vinegar
2 tablespoons dijon mustard
1/4 cup packed brown sugar
2 tablespoons worcestershire sauce
2 teaspoons liquid smoke flavoring
1 teaspoon kosher salt
1 teaspoon black pepper
Directions:
1. Place roast in crockpot and add remaining ingredients.
2. Cook in crockpot on low 6-8 hours, until meat falls apart easily.
3. Shred and serve.
