Slow-Cooked Barbecued Beef |

From Dream Dinners cookbook. Ingredients:
2 lbs beef chuck roast, fat trimmed |
1 cup yellow onion, diced |
1 teaspoon minced garlic |
2 cups ketchup |
1/4 cup balsamic vinegar |
2 tablespoons dijon mustard |
1/4 cup packed brown sugar |
2 tablespoons worcestershire sauce |
2 teaspoons liquid smoke flavoring |
1 teaspoon kosher salt |
1 teaspoon black pepper |
Directions:
1. Place roast in crockpot and add remaining ingredients. 2. Cook in crockpot on low 6-8 hours, until meat falls apart easily. 3. Shred and serve. |
