Got this from after a recent tofu & sloppy joe craving. Delish Ingredients:
1 medium onion, diced |
1 green pepper, diced |
2 cloves garlic, minced or pressed |
1 lb lite firm tofu, patted dry,crumbled |
2 tablespoons light soy sauce |
2 cups tomato sauce |
1 tablespoon chili powder (i know, it's a lot. scale back, if desired, but bread and veggies should cut the heat) |
1/2 teaspoon ground cumin |
Directions:
1. Heat skillet over medium high. 2. Cook onion, pepper, and garlic until soft. 3. Add tofu and soy sauce. 4. Cook, stirring constantly until brown. 5. Add tomato sauce and seasonings. 6. Cook 2-3 more minutes to incorporate. 7. Serve over hamburger buns (I also saw mom using leftovers as a tortilla chip dip). |
