Vegetarian sloppy joes Ingredients:
1 tbsp olive oil |
1 medium yellow onion, chopped |
1 yellow pepper, seeded and chopped |
1 tbsp chili powder |
1 1/2 cups lentils |
14 1/2 oz crushed tomatoes |
3 cups water |
1/4 cup ketchup |
2 tbsp worcestershire sauce |
2 tbsp tamari |
1 tbsp mustard |
1 tbsp sugar |
1 tsp salt |
Directions:
1. Heat the oil in a medium-size skillet over medium heat. Add the onion and bell pepper, cover, and cook until softened, about 5 minutes. Add the chili powder, stirring to coat. 2. Transform the onion mixture to a slow cooker (3/12 quart or larger). Add the lentils, tomatoes, water, tamari, mustard, sugar, ketchup, worcestershire, salt, and pepper to taste and stir to combine. 3. Cover and cook on Low for 8 hours. |
