I'm always looking for ways to make my meat-and-potatoes lover eat a little healthier. I think I'll sneak in some shredded carrot too. This could probably be made in the crock pot too. Ingredients:
1 lb ground beef |
1/2 cup onion, chopped |
1 garlic clove, minced |
2 cups water |
8 ounces tomato sauce |
1/2 cup dry lentils |
1/2 cup ketchup |
1 teaspoon cider vinegar |
1/2 teaspoon ground mustard |
1/4 teaspoon pepper |
6 -8 hamburger buns |
Directions:
1. In a skillet, cook beef, onion and garlic over medium heat until meat is no longer pink; drain. 2. Add the water, tomato sauce, lentils, ketchup, vinegar, mustard and pepper; bring to a boil. 3. Reduce heat; cover and simmer for 60-70 minutes until lentils are tender. 4. Serve on hamburger buns. |
