Sloppy Joes, Lentil-Style |

A delicious, tangy alternative to meat. Yum-a-lum! Ingredients:
1 cup lentils, rinsed and drained |
3 cups water |
1 tsp olive oil |
1 red onion, diced |
1/4 tsp black pepper |
8 oz. tomato sauce |
1/2 cup ketchup |
1/4 cup barbecue sauce |
1 tsp chili powder |
Directions:
1. In a sauce pan, combine water and lentils. Bring to a boil, then simmer until tender-about 30 minutes. 2. In a separate skillet, heat onions and pepper until tender. Combine remaining ingredients and simmer for 5 minutes. 3. When lentils are ready, drain any remaining liquid. Add lentils to sauce mix and stir until combined. 4. Serve on a bun with lettuce, oh yeah. |
