I found this recipe in Woman's World magazine. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
1 lb ground beef |
1 onion, chopped (1 cup) |
15 1/2 ounces sloppy joe sandwich sauce |
11 ounces mexicorn, drained |
1 cup bisquick baking mix |
3/4 cup shredded cheddar cheese |
1 scallion (optional) |
Directions:
1. Preheat oven to 425. 2. Coat 1 1/2-quart baking dish with cooking spray. In large nonstick skillet, cook beef and onion over medium heat until beef is browned and onion is tender, 5 minutes. Drain excess fat. Stir in sloppy joe sauce; cook until heated through; remove from heat. Reserve 1/3 cup mexicorn; stir remaining into beef mixture; transfer to baking dish. Stir baking mix, 1/2 cup cheese and 1/3 cup water into reserved mexicorn; dollop spoonfuls over beef mixture. 3. Bake 15-20 minutes or until biscuits are golden, sprinkling with remaining 1/4 cup cheese during last 2 minutes of cooking. Cool 10 minutes. If desired, sprinkle with 1 scallion, sliced. |
