Kids will eat their veggies if you give them funny names... Ingredients:
3 cups frozen peas |
3 cups vegetable broth, heated to boiling |
1 scallion, torn in half |
8 ounces fresh mozzarella cheese |
Directions:
1. Add peas and scallion to vegetable broth. Return to the boil and cook until peas are tender, about 10 minutes. Discard scallion. 2. Snip or dice mozzarella into small bits. Add to blender. Add peas and broth to blender. Remove center of lid, cover with dishtowel, and blitz until smooth. |
