A close clone for Slim Jims made in a food dehydrator. No casing is needed so you won;t get that snap you are used to. I have made these and you need to adjust the spices to your liking. Suggestion, make a small thin patty and fry to test. Read more . That will be as close as you can get. And watch the dehydrator carefully so you don;t wind up with slim jim jerky! Ingredients:
2 pounds of ground lean meat |
1/2 tsp mace |
2 1/2 tbs. paprika |
1 3/4 tbs. ground mustard |
1/4 tsp. celery seed |
1/4 tsp. black pepper |
1/4 tsp. white pepper |
1/4 tsp. red pepper |
1 tbs. corn syrup |
Directions:
1. Blend together with meat. 2. Dehydrate 4 1/2 - 5 hours on high setting I use an American Harvest Jerky express dehydrator and the gun that came with it and a round tip. 3. After dehydrating, I cut them into 6 inch pieces. 4. I also vacumn pack them in plastic 5. These have nothing to preserve them. Can be frozen. |
