This salad is best if you make it with juicy, sweet, summertime tomatoes.
Ingredients:
2 tomatoes (about 3/4 pound)
2 tablespoons coarsely chopped fresh basil
1 teaspoon capers
1 tablespoon balsamic vinegar
1 tablespoon water
2 teaspoons extravirgin olive oil
1 small garlic clove, minced
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
Directions:
1. Cut each tomato vertically into 6 slices. Arrange on a serving plate; sprinkle with basil and capers.
2. Combine vinegar and next 5 ingredients in a small bowl; stir with a whisk. Pour vinegar mixture over tomatoes.
