Ingredients:
1 1/2 pounds unpeeled baking potatoes, cut into 1/4-inch-thick slices |
1/4 cup fat-free honey-dijon dressing |
1 tablespoon finely chopped fresh basil or 2 teaspoons dried basil |
1/4 teaspoon salt |
1/8 teaspoon ground pepper |
Directions:
1. Cook potato in a large saucepan in boiling water to cover 8 minutes or until tender. Drain potato well, reserving 2 tablespoons cooking liquid; place potato in a medium bowl. 2. Combine cooking liquid, dressing, and remaining 3 ingredients in a small bowl, stirring well with a wire whisk. Pour over potato; toss gently. |
