Sliced Peaches in Lime Rum Sauce (Diabetic) |

From The American Diabetes Association's Flavorful Seasons Cookbook, this sounds simple and refreshing. Ingredients:
1/3 cup fresh lime juice |
2 teaspoons dark rum |
1 tablespoon honey, plus |
1 teaspoon honey |
2 tablespoons water, plus |
2 teaspoons water |
1/8 teaspoon clove |
1 1/4 teaspoons cornstarch or 1 1/4 teaspoons arrowroot |
2 3/4 teaspoons water |
2 cups peaches, sliced |
Directions:
1. In a saucepan over medium heat, heat the lime juice, rum, honey, and water. 2. Bring to a boil, lower the heat, and simmer for 5 minutes. 3. Add the cloves. 4. Mix together the cornstarch or arrowroot powder and water. 5. Add to the sauce. 6. Add to the peaches and cook for about 10 minutes. 7. Chill and serve in individual dishes. 8. Exchanges: 1 Fruit. |
