The English cucumber is ideal for this salad because it is seedless. Pickling or salad cucumbers may also be used. Ingredients:
2 cups thinly sliced peeled english cucumber |
1 tablespoon minced fresh chives |
2 teaspoons minced fresh cilantro |
2 tablespoons rice vinegar |
1 teaspoon sugar |
1/8 teaspoon salt |
1/8 teaspoon crushed red pepper |
Directions:
1. Combine cucumber, chives, and cilantro in a medium bowl. Combine vinegar and remaining 3 ingredients in a small bowl, stirring until sugar dissolves. Pour vinegar mixture over cucumber mixture; stir gently. |
