Sliced Cantaloupe and Blackberries with Almond Cream |

Ingredients:
1/2 cup tub-style fat-free cream cheese, softened |
2 tablespoons powdered sugar |
1 tablespoon 1% low-fat milk |
1/4 teaspoon almond extract |
1/2 (2 1/2-pound) cantaloupe, peeled, seeded, and cut lengthwise into 1/4-inch-thick slices |
1 cup blackberries |
4 teaspoons sliced almonds, toasted |
mint sprigs (optional) |
Directions:
1. Combine first 4 ingredients in a small bowl, and beat at high speed of a mixer until smooth. Arrange cantaloupe slices, 1/4 cup blackberries, and 2 tablespoons cream cheese mixture on each of 4 dessert plates. Sprinkle each serving with 1 teaspoon toasted almonds, and garnish with mint sprigs, if desired. |
