From most recent book. Haven't tried. This combination of bell pepper, onion, and peas brings a delicious sweetness to this Chinese style dish. A red and yellow bell pepper can be used in place of the green. Ingredients:
1 1/2 lbs top round steaks (about 3/4-inch thick) |
salt |
fresh ground black pepper |
1 teaspoon extra virgin olive oil |
1 large green bell pepper, thinly sliced |
1 medium onion, thinly sliced |
1 garlic clove, minced |
6 ounces snow peas, strings removed |
2 tablespoons water |
1 tablespoon low sodium soy sauce |
Directions:
1. Season steak with salt and black pepper. Lightly coat a large nonstick skillet with cooking spray and heat over medium-high heat. Add steak and cook for 4 minutes per side for medium rare. Remove from heat. 2. Transfer steak to a cutting board and let sit for 5 minutes before slicing. 3. Meanwhile, in same pan, heat oil over medium-high heat. Add bell pepper, onions, and garlic. Cook, stirring constantly, 5 minutes. 4. Add peas and water. Cover the pan and cook, stirring occasionally until vegetables are softened, about 5 minutes. Uncover, add soy sauce, and cook 30 seconds longer. Add sliced steak to pan and toss briefly just to heat through. Serve warm. |
