This recipe comes from an estate sale I purchased recently. I have not made these but they sound fantastic as we are potato fanatics around here. Enjoy Ingredients:
4 medium potatoes |
1 teaspoon salt |
2 tablespoons butter melted |
2 tablespoons fresh chives |
4 tablespoons cheddar cheese grated |
1-1/2 tablespoons parmesan cheese |
Directions:
1. Scrub potatoes and rinse well then cut into thin slices but not all the way through. 2. Use handle of a spoon to prevent knife from cutting all the way. 3. Put potatoes in a baking dish and fan them slightly. 4. Sprinkle with salt and drizzle with butter then sprinkle with thyme. 5. Bake potatoes at 425 for 50 minutes then remove from oven and sprinkle with cheese. 6. Bake potatoes for another 15 minutes until lightly browned. |
