When the craving for sauced-up spaghetti hits but you don't want to chow down a bunch of heavy carbs, try broccoli cole slaw. This shredded veggie mix is found with the bagged salads in the produce section - only 25 calories per cup. Ingredients:
one 12-ounce bag (4 cups) broccoli cole slaw |
1 cup low-fat creamy tomato soup or canned crushed tomatoes |
1 teaspoon chopped garlic, or more to taste |
dash onion powder, or more to taste |
dash each salt and black pepper, or more to taste |
dash red pepper flakes, or more to taste |
3 tablespoons reduced-fat parmesan-style grated topping |
Directions:
1. Bring a skillet sprayed with nonstick spray to medium-high heat. Add slaw and 1/4 cup water. Cook and stir until water has evaporated and slaw has slightly softened, 5 to 8 minutes. 2. Add soup/tomatoes, garlic, seasonings, and 2 tablespoons Parm-style topping. Cook and stir until hot, 3 to 4 minutes. 3. Serve topped with remaining 1 tablespoon Parm-style topping! |
