This is a quick pasta I came up with, with ingredients I had on hand and my Husband loved, loved loved it. The bacon and the toasted coconut gives this dish an extra dimension. I served it with baked (bone in) chicken breasts but you could serve this dish with anything or on it's own. Ingredients:
8 ounces pasta (any shape you like) |
2 -3 tablespoons unsalted butter |
1/2 cup chicken stock |
2 tomatoes (chopped) |
3 tablespoons capers |
3 garlic cloves (chopped) |
4 green onions (chopped) |
1 teaspoon red pepper flakes |
1 lemon, juice of |
1/2 cup fresh basil (chopped) |
1 cup macadamia nuts (chopped) |
1/2 lb bacon (cooked, drained & chopped) |
1/2 cup flaked coconut (toasted) |
1/2 cup parmesan cheese (or to taste) |
Directions:
1. Cook pasta according to package. 2. Meanwhile add butter and chicken stock to pan. 3. Saute tomatoes, capers, garlic, green onions and red pepper flakes till cooked and thickened a bit. 4. Add this mixture to pasta along with fresh lemon juice, fresh basil, nuts, cooked bacon, toasted coconut and freshly grated Parmesan cheese. 5. Enjoy! |
