These potatoes are so different and wonderful. Serve them at your 4th of July party and people will ooh and aah before the first rocket goes off! Ingredients:
24 new red potatoes,halved lengthwise |
2tsp. extra-virgin olive oil |
11/2c sour cream |
1c crumbled blue cheese |
1/2c crumbled cooked bacon,plus more for garnish |
1/3c. chopped flat-leaf parsley,plus more for garnish |
1/4 red onion,finely chopped |
Directions:
1. Preheat oven to 400. In a medium bowl,toss potatoes with olive oil. Place cut side down on baking sheet and bake till skins are crisp. 2. 20-25mins;let cool 3. Scoop out the center of each potato half and place in a medium bowl. Stir in sour cream,blue cheese,bacon,parsley and onion. Fill each potato skin with the sour cream mixture and top with more bacon and parsley. |
