SKIRLIE DATED 1922 I obtained this recipe from an estate sale when I purchased the family collection from the Holder Estate in Sherman, Texas in 1992. Ingredients:
1 onion thinly sliced |
2 strips bacon |
1/2 cup oatmeal |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Chop bacon into 1” chunks and fry then when grease coats pan add sliced onion. 2. Cook until transparent then add oatmeal to absorb fat keeping the mixture thick. 3. Stir 10 minutes until cooked. 4. Serve with mincemeat roasted poultry, or as a main dish when the larder is bare. |
