Skinny Turkey-Spinach Meat Loaf |

This recipe combines ground beef and ground turkey breast to yield a moist, tasty meat loaf. Ingredients:
cooking spray |
1 cup finely chopped onion |
3 garlic cloves, minced |
1 cup dry breadcrumbs |
1/2 cup fat-free milk |
1 tablespoon worcestershire sauce |
1 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
4 large egg whites |
1 1/2 pounds ground turkey breast |
1/2 pound ground beef, extralean |
2 (10-ounce) packages frozen leaf spinach, thawed, drained, and squeezed dry |
1/2 cup ketchup |
Directions:
1. Preheat oven to 350°. 2. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion, and sauté 4 minutes. Add garlic, and sauté 30 seconds. Remove from heat. Combine onion mixture, breadcrumbs, and the next 8 ingredients (breadcrumbs through spinach), stirring well. 3. Shape meat mixture into a 12 x 5-inch loaf on a broiler pan coated with cooking spray. Brush ketchup over the top of the loaf. Bake at 350° for 45 minutes or until a thermometer registers 160°; let stand 10 minutes before slicing. |
