Skinny Pumpkin Vegan Brownies |

Adapted from /2009 /09/vegan-pumpkin-brownies/. Ingredients:
15 oz canned pumpkin puree |
1 cup unsweetened applesauce |
1-6 ounce cup source fat free plain yogurt |
1/ 2 cup demerara sugar |
1 tbsp vanilla extract |
2 tbsp pumpkin pie spice |
1 1/2 cups just like sugar sweetener (or granulated sugar) |
1 cup whole wheat flour |
1 cup cocoa powder |
1 tsp baking powder |
1/2 tsp salt |
Directions:
1. Preheat oven to 350 F, lightly grease or line a 9 square pan. 2. In a large bowl, combine pumpkin, applesauce, yogurt, demerara sugar, vanilla and pumpkin pie spice until well blended. 3. In a smaller bowl, whisk Just Like Sugar , flour, cocoa, baking powder and salt together. 4. Add flour mixture to the wet ingredients and combine gently. 5. Spread evenly in the prepared pan. 6. Bake 20-30 minutes. Allow to fully cool before slicing. |
