Flavor & fun of buffalo wings without all the fat Ingredients:
1 pound boneless, skinless chicken breast |
4 oz tomato paste |
3/4 cup lime juice |
2 tablespoons extra virgin olive oil |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
2 teaspoons cumin |
4 red chili peppers (2 japon, 2 guajillo) |
Directions:
1. cut chicken into 1 ounce portions and rinse. 2. place remaining ingredients in blender and blend till smooth. 3. pour over chicken and mix well. 4. marinate at least 30 minutes. 5. Broil on high till brown, turn and brown other side. |
