Make & serve in one pan. We cooked the rice ahead of time. Serve with baked taco chips to scoop. Ingredients:
1 lb ground beef |
1 (1 1/4 ounce) package taco seasoning (to taste) |
2 1/2 cups water |
2 1/2 cups cooked brown rice |
2 cups shredded low-fat cheddar cheese |
2 cups chopped lettuce |
1 large tomato, chopped |
nonfat sour cream |
salsa (optional) |
Directions:
1. Spray a large nonstick skillet with olive oil spray. 2. Add meat and brown. 3. Add seasonings and water. Bring to a boil then simmer for approx 20 minutes. 4. Add rice and simmer until mixture thickens. 5. Sprinkle with cheese. Cover pan until cheese melts. 6. Smooth a layer of sour cream. Top with the tomato and lettuce. 7. Serve & scoop with the taco chips. 8. Enjoy! |
