2 teaspoons olive oil |
1 cup onion, thinly sliced |
2 medium sweet potatoes, peeled and cut into 1/2-inchx1/2-inch thick strips (about 1 lb) |
1/2 cup vegetable stock |
salt |
fresh ground pepper |
Directions:
1. Heat oil over medium heat in a nonstick skillet. 2. Cook onions, stirring occasionally, until softened and golden (about 5 minutes). 3. Add sweet potatoes and stock to skillet; cover tightly; simmer, stirring every 5 minutes, for about 15 minutes or until tender. 4. Season with salt & pepper to taste. |
