I substituted black eyed peas for the corn niblets originally called for in this recipe. Taken from Savour Perth's Flavours. Ingredients:
1 lb lean ground beef |
1/2 cup celery, chopped |
1/2 cup onion, chopped |
1/2 cup carrot, chopped |
1 (28 ounce) can tomatoes |
1/2 cup rice, uncooked |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1/2 teaspoon chili powder |
2 tablespoons ketchup |
1 (19 ounce) can black-eyed peas |
1 cup cheddar cheese, grated |
Directions:
1. Preheat oven to 350'. 2. brown ground beef in oil. 3. add celery, onions, and carrots. 4. Cook 5 minutes, stirring constantly. 5. Drain off any extra fat. 6. Add remaining ingredients except cheese. 7. Stir to mix. 8. Put into casserole dish. 9. Sprinkle cheese on top. 10. Bake for 25 minutes at 350'F. |
