I love to find new ways to serve familiar veggies! This old cookbook I stumbled across is worth it's weight in gold! (Marlboro Country Cookbook Morning Fires, Evening Lights (Philip Morris, Inc, 1998). Read more .) Ingredients:
2 (10 oz) pkg fresh or frozen spinach |
4 tbs butter or margarine |
1/2 cup finely chopped onion |
2 small cloves garlic, minced |
2 (3oz) pkgs cream cheese |
salt, pepper, nutmeg |
Directions:
1. Wash and drain fresh spinach. Melt butter in a large skillet. Add spinach, onion and garlic; cook and stir until spinach is wilted or defrosted and onion is soft. 2. Cut cream cheese into cubes; add to spinach. Cover and cook until cheese softens, about 5 minutes. Stir to mix, and season with salt, pepper, and nutmeg. |
