This is a very flavorful rice dish, I remember growing up having this as a child. Enjoy Ingredients:
6 to 8 slices bacon |
1/2 cup chopped onion |
1/2 cup chopped green bell pepper |
1 can stewed tomatoes |
1 small can tomato sauce |
1 cup rice |
salt and pepper, to taste |
Directions:
1. Fry bacon in a large cast iron skillet. Remove bacon strips and set 2. aside 3. In remaining bacon grease, saute onion and pepper over medium heat. 4. Cut stewed tomatoes into pieces and add to skillet with 1/2 can of water. Add remaining ingredients and bring to boil. Cover; reduce heat to low and simmer 15 minutes until done. Crumble bacon over top and serve. |
