This is a good skillet casserole, not a lot of work goes into it, just takes a few minutes but tons of flavor, it's good with mushrooms in it too but then my husband wouldn't touch it so you know. Ingredients:
1/2 white onion |
1/4 bell pepper |
2 garlic cloves |
1 (14 ounce) can diced tomatoes |
1 lb shrimp |
1 dash tabasco sauce |
2 -3 tablespoons butter or 2 -3 tablespoons bacon grease |
2 -3 cups cooked rice |
Directions:
1. Heat up the bacon grease or butter in your skillet. 2. Finely chop onion, bell pepper, and garlic and saute in the skillet til softened. 3. Add in the tomatoes do not drain and let heat up. 4. Add in the shrimp and tabasco and let cook til the shrimp is done. 5. Take up and serve with rice. |
