1 tablespoon butter |
3/4 lb russet potato, peeled and thinly sliced |
1/2 cup thinly sliced red onion |
1 1/2 teaspoons flour |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1 cup milk |
1 tablespoon chopped parsley |
Directions:
1. In a heavy nonstick skillet, melt 1/2 tablespoon butter. Off heat, spread half of potato slices in skillet and top with red onion. 2. Sprinkle on half the flour, salt and pepper. Top with remaining potato slices, flour, salt and pepper and dot with remaining butter. 3. Pour milk over potatoes and bring to a boil over high heat. Reduce heat to medium-low, cover and cook until potatoes are tender, about 12 minutes. 4. Sprinkle with parsley before serving. |
