Skillet-roasted Carrots And Parsnips

Nicely caramelized and sweet carrots and parsley. Nice side dish for any roast or baked pork or poultry dish!
Ingredients:
3tbs vegetable oil
11/2lbs carrots,peeled and cut diagonally into 1/2 pieces
11/2lbs parsnips,peeled and cut diagonally into 1/2 pieces
3/4c water
11/2tsp sugar
salt and pepper
1tbs finely chopped parsley
Directions:
1. Heat o;i in lg. skillet over med-high heat until shimmering. Cook carrots and parsnips,stirring occasionally,until golden brown,12-14 mins.
2. Whisk water,sugar,and 1tsp.salt in small bowl until sugar dissolves. Add water mixture to skillet and cook covered,stirring occasionally,over med-low heat till vegetables are tender and liquid has evaporated,12-14 mins. Stir in parsley,season with salt and pepper.. Serve
