Beef and pepper dish Ingredients:
1 tsp. olive oil |
1 large onion |
1 1/4 pound extra lean ground beef |
2 tsp. minced garlic |
1/4 tsp. ground black pepper |
8 oz. mushrooms |
1 green pepper |
2 tsp. worcestershire sauce |
14 1/2 oz. beef broth |
10 oz. cream of mushroom soup |
2 1/4 cup instant rice |
1 salt (to taste) |
1/2 c. finely shredded cheddar cheese |
Directions:
1. Warm oil in a deep, 12-in. nonstick skillet over med. heat. Coarsely chop onion and add it to the skillet. Add beef and raise the heat to high. Add garlic, black pepper, and mushrooms. Cook, turning and breaking up meat from time to time. 2. Coarsely chop green pepper and add to the skillet. Add Worcesterdhire sauce. Cook, stirring frequently, 5 to 6 min., or until meat is crumbled and browned. Stir in broth, soup, and rice. Cover and bring to a boil. Cook 5 min., or until rice absorbs most of the liquid; stir occasionally. 3. Season with salt and sprinkle with cheese. Cover and cook 1 to 2 min. or until cheese melts. |
