Skillet Potatoes With Pesto And Shrimp

This is a very easy and tasty recipe! One pan, a few ingredients, 30 minutes, and you're done! Its very hearty also. The flavors go together nicely. I think of it as an Italian version of fish and chips!
Ingredients:
2 large potatoes- washed, peeled, and thinly chopped
3-4 tbls. extra virgin olive oil
salt & pepper to taste
1/3 cup pesto...i'll include my mom's quick homemade version at the bottom.
1/2 lb. large shrimp- 31-40 ct. size-cleaned and peeled
Directions:
1. Heat oil in a large skillet on med/high heat.
2. Sprinkle potatoes with salt and pepper.
3. Add potatoes to skillet and cook til tender, stirring frequently.
4. Add shrimp and cook til shrimp is opaque. Then add pesto and toss to coat.
5. Cook for about 1 minute to heat pesto.
6. Taste and add more salt and pepper if needed.
7. Serve warm.

9. Mom's Quick and Delicious Pesto

11. 2 cups of fresh basil leaves
12. 3 large cloves of garlic
13. 1/2 cup extra virgin olive oil
14. 1/4 cup grated parmesan cheese
15. Yes...there are no nuts in this recipe and it is still perfect!
16. Add all ingredients to a food processor and grind to a loose paste.
