I have always loved these simple potatoes. It is best when you let them get crispy. Use a cast iron skillet for best results! Ingredients:
3 to 4 large russet potatoes, peeled and thinly sliced |
1 onion, sliced thin |
1 bell pepper, sliced thin |
oil or bacon grease (about 3 tablespoons) |
salt and pepper |
2 tablespoons butter |
2 pieces of bacon, cooked crisp and crumbled |
Directions:
1. Heat oil or bacon grease in skillet. 2. Add potatoes ,cover and cook over medium/low heat, stirring every so often, for 10 to 12 minutes. 3. Add onions and bell pepper and continue to cook over medium/low heat until tender. 4. Remove cover, season with salt and pepper. 5. Add bacon and butter and continue to cook until brown. 6. Turn potatoes and brown on other side. 7. If desired, drain on paper towels before serving. |
