Skillet Pork Egg Spinach Combo |

1 skillet breakfast dish with protein,veggies,dairy. Excellent low-carb meal. Ingredients:
1 lb ground pork |
1 pk frozen spinach |
4 eggs |
1 small onion chopped |
1/2 cup chopped mushrooms (i like the flavor of portabella) |
garlic (to taste) |
salt |
olive oil |
splash worchestershire sauce (optional) |
1 tbl butter (optional) |
2 oz grated/shredded cheese (i prefer cheddar but mozzarella would be good) |
Directions:
1. Add olive oil to skillet (I use heavy iron skillet) 2. Brown ground pork, add mushrooms,onions & garlic while browning 3. Thaw Spinach in microwave til nearly done 4. Add to the browned pork mixture and stir until blended 5. Stir eggs in bowl 6. Make a well in the middle of pork mixture to the bottom of skillet 7. Add 1 tbl butter til melted (optional) 8. Pour eggs in skillet well and stir until the eggs set 9. Fold all ingredients together -approximately 1 minute more cooking time 10. Sprinkle cheese on top 11. Can be refrigerated and reheated in microwave |
