Skillet Macaroni and Cheese |

This is easy and tasty when you need something quick. Ingredients:
2 cups uncooked elbow macaroni |
2 tablespoons butter |
2 tablespoons all-purpose flour |
2 tablespoons sweet onions, finely chopped |
1/4 teaspoon seasoning salt (or to taste) |
1/4 teaspoon pepper (or to taste) |
1/4 teaspoon ground nutmeg |
1 1/2 cups half-and-half cream |
3/4 lb velveeta cheese, cubed |
Directions:
1. Cook macaroni, according to the package directions. 2. Meanwhile, in a large nonstick skillet, melt butter over medium heat. 3. Add onion and saute over low heat for about 2 minutes. 4. Stir in flour until smooth. 5. Stir in salt, pepper and nutmeg. 6. Gradually add cream; bring to a boil. 7. Cook and stir for 2 minutes or until thickened. 8. Reduce heat. 9. Stir in cheese until melted. 10. Drain macaroni; add to cheese mixture. 11. Cook and stir for 3-4 minutes or until heated through. |
