This is something I came up with when time was short and ingredients handy. Ingredients:
1 lb ground beef |
1 medium onion, chopped |
3 garlic cloves, chopped |
1 (10 ounce) can rotel tomatoes |
1 (15 ounce) can whole kernel corn, drained |
1 (15 ounce) can pinto beans, drained |
1 (6 ounce) can tomato paste, if needed |
Directions:
1. Saute Onion & Garlic until Onion is translucent. 2. Add Ground Beef to Brown, then drain. 3. Add Rotel, Corn and Beans. 4. If mixture is on the dry side, add Tomato Paste. 5. Cook until heated through. |
