From the Perini Steakhouse cookbook! Ingredients:
2 cups buttermilk |
2 eggs |
1 teaspoon baking soda |
2 cups yellow cornmeal |
1 teaspoon salt |
3 tablespoons melted butter |
1 drop vanilla |
Directions:
1. Preheat cast iron skillet in at 450 degrees. Combine buttermilk, eggs, and baking soda Mix well. In a separate bowl, mix cornmeal and salt. Add the buttermilk mixture, melted butter, and vanilla. Mix well. Pour into skillet. Bake for 35 minutes, using toothpick to check for doneness. |
