Ingredients:
1 cup yellow cornmeal |
1/2 cup all-purpose flour |
1 tablespoon baking powder |
1/2 teaspoon salt |
1 tablespoon sugar |
1 cup buttermilk |
1/4 cup bacon drippings or melted butter |
2 large eggs |
Directions:
1. Grease a 9-inch cast-iron skillet; preheat in a 400° oven 4 minutes. 2. Combine first 5 ingredients in a bowl; make a well in center of mixture. 3. Combine buttermilk, bacon drippings, and eggs, stirring well; add to dry ingredients, stirring just until moistened. Pour into hot skillet. 4. Bake at 400° for 20 to 25 minutes or until golden brown. Remove from skillet, and serve warm or at room temperature. |
