A good southern style cormbread Ingredients:
3 strips bacon, diced into 1/2 inch cubes |
1 cup self-rising flour |
1 cup self-rising corn meal |
1/4 cup sugar |
1 tsp kosher salt |
1 tsp garlic powder |
1/2 tsp cayenne pepper (or to taste) |
2 eggs |
3/4 cup vegetable oil |
buttermilk |
Directions:
1. Preheat oven to 375. 2. In a 10 cast iron skillet saute bacon until crispy 3. Mix all dry ingredients together in a mixing bowl. 4. Add eggs and oil and mix to combine. 5. Add butter milk to mixture until it is about the consistency of a thick cake mix-about 2/3 to 3/4 of a cup. 6. Pour mixture into skillet with bacon bits and drippings (didn-t say it was healthy) 7. Bake for about 25 minutes or until a toothpick comes out clean. |
