This is a sweet, rich, easy to make corn bread baked in a cast iron skillet. Ingredients:
2 cups biscuit mix |
3/4 cup sugar |
1 cup yellow cornmeal |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 cup butter (not margarine) |
1 cup half-and-half cream |
2 eggs, lightly beaten |
Directions:
1. Mix the dry ingredients in a bowl. 2. Scald the butter and cream then add to the dry ingredients. 3. Mix in the eggs. 4. Grease and flour a 9 or 10 inch cast iron skillet. 5. Bake at 350°F for 30 minutes. |
