I seen these made on TV they looked SOOooo good, also a very easy side dish. The recipe is courtsy /food Ingredients:
3/4 cup flour |
3/4 cup cornmeal |
1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon sugar |
1 1/4 cups buttermilk |
1 egg |
1/4 cup half-and-half cream |
2 tablespoons melted butter |
3 -4 minced green onions |
1/2 cup sour cream |
1 teaspoon cayenne |
1/2 cup chopped yellow onion |
1 cup corn (canned or frozen) |
olive oil (for frying) |
Directions:
1. Saute, the 1/2 cup chopped yellow onions,add the 1 cup of corn and saute until transparent, sit aside. 2. In a large bowl mix Flour, cornmeal, baking powder, soda, salt and sugar together. 3. Whisk together buttermilk,egg,half & half,and melted butter:Add to the dry ingredients and whisk until smooth. 4. Add Onions and corn to batter; Heat a nonstick skillet and ladle 2-ounces for each cake, Fry until browned turn and cooked other side until browned, serve. |
